Green curry with grilled GRECO Loumini

Ingredients for four persons:

40 g green curry paste
300 ml coconut milk
100 ml vegetable stock
1 bunch coriander
150 g bell pepper, finely chopped
150 g snow pears cut in strips
150 g baby corn, finely chopped
100 g spring onions
250 g GRECO Loumini, diced


Sauté the green curry paste in a wok.
200 ml coconut milk for deglazing.
Add 100 ml vegetable broth.
Mix 100 ml coconut milk with the coriander as thoroughly as possible and add.
Boil for approx. 20 minutes and then strain through a sieve.
One after the other, place bell pepper, snow peas, baby corn and spring onions in the wok and sauté.
Deglaze with the green curry sauce and let boil for 5 minutes.
Sauté the GRECO Loumini in a pan with a little oil until it is golden brown on all sides, and arrange it on the curry.

We recommend serving this dish with rice.
