GRECO Loumini with couscous

Ingredients for 4 persons:

250 g GRECO Loumini, diced
300 g couscous
600 g bell pepper
2 tbsp olive oil
2 cloves garlic, finely chopped
30 g herbs (oregano, basil, parsley), chopped
600 ml broth
Cocktail tomatoes if desired

Preparation:

In a large pot, bring 600 ml broth to a boil, remove the pot from the stove and add couscous. With the lid on, let the pot stand for 5 minutes, pour off the water and put couscous in a large bowl. Dice or slice the bell peppers and lightly sauté in a small pot. Set aside.

Heat the oil in a pan, and fry the Greco Loumini until it is golden brown. Add the bell pepper and the herbs to the couscous in the bowl, mix well and season. Decorate with slices of loumini. That’s it! Garnish with cocktail tomatoes, if desired.
